Gluten-Free Coffee Banana Bread

Ingredients:

  • 2 mashed bananas
  • 1/3 cup sparkling water
  • 3 eggs
  • Coffee extract
  • Vanilla extract
  • 200g almond flour
  • 70g coconut flour
  • Approximately 3 tbsp honey
  • 1/4 cup oil
  • 1 tsp baking soda + 1 tsp baking powder
  • Chopped pecans
  • 1 tsp cinnamon + a pinch of salt

For the optional topping:

  • 2 tbsp coconut sugar
  • 1 tsp coffee extract
  • 1 tbsp dark coffee
  • Chopped pecans
  • A pinch of cinnamon

Instructions:

  1. Begin by mashing your bananas using a fork. Add the remaining wet ingredients to the bowl and mix well.
  2. Incorporate the dry ingredients, excluding the pecans. Stir until combined, then fold in the chopped nuts.
  3. Transfer the batter to a parchment-lined baking pan and bake at 170 degrees Celsius for 30-35 minutes. To check for doneness, insert a toothpick into the center; if it comes out clean, it’s ready.
  4. For the optional topping, combine all ingredients and simmer using the bain-marie method.
