Peels-And-All Mandarin Cake

Ingredients:

  • 4 mandarins
  • 2 cups almond flour
  • 1/4 cup coconut sugar or honey
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 4 drops of mandarin essential oil
  • 4 eggs
  • 1/2 tbsp coconut flour

Instructions:

  1. Begin by boiling the unpeeled mandarins for approximately 45 minutes until they are super soft.
  2. Once the mandarins are soft, transfer them to a food processor and blend until smooth and combined. Allow them to cool.
  3. In a separate mixing bowl, combine the almond flour, coconut sugar (or honey), baking powder, baking soda, salt, vanilla extract, mandarin essential oil, and eggs.
  4. Once the mandarins have cooled, fold them into the mixture until well combined.
  5. Pour the batter into a greased pan and bake in a preheated oven at 180 degrees Celsius for about 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Once the cake has cooled, top it with coconut whipped cream and fresh mandarins for an extra touch of indulgence.
